Winter Greenhouse Growing Inspiration

….lower heat requirements by only growing lettuce mix and early maturing crops, like chives, bunching onions, radishes and leafy greens. This allows them to seed multiple times and always have a fresh harvest ready for winter markets. Because of their low light and heat requirements, many of these crops reach maturity quickly, resulting in a faster turnover.

Species to Grow Inspiration

    1. Leafy greens
    2. Root vegetables
    3. Herbs
    4. Microgreens
    5. Cold-tolerant flowers

A huge variety of crops ideal for winter greenhouse gardening; in fact, some will positively thrive and give you homegrown vegetables throughout the cold season.

Harvest a Leaf at a time

Mustard greens, kale, arugula, and spinach are examples of leafy green vegetables that tolerate cool greenhouse growing conditions and can be harvested a single leaf at a time rather than removing the whole head. If you add miniature Bok Choi or head lettuce to the mix and remove them as individual whole plants, this leaves a gap for kale and spinach to keep growing all winter and fill in the space left between plants.

The winter superstars include Winterbor kale, mache, tatsoi, and scallions. In heated greenhouses can grow an even wider selection of winter vegetables and herbs. Many hardy herbs like chives, thyme, and parsley can also be winter harvested from a greenhouse. I dig these up from my beds in early autumn and transplant them inside the structure.
